Sushi Workshop: How to Make Gunkan

Find out how to make gunkan, or “battleship” sushi. It is prepared by forming a mound of rice that is wrapped with a strip of nori to form a small cup or vessel.  The vessel is topped with loose or finely-chopped ingredients, such as roe or sea urchin.

Toppings will depend on the type of gunkan you are making. Choose from our recommended toppings or have some fun and create your own!

Step-by-Step Instructions

Prepare your choice of topping ingredients based on the type of gunkan you are making. When using raw fish and/or seafood, always ensure that you are using high quality, fresh ingredients.

  1. Cut nori sheet(s) into six strips.
  1. Dip your hands in the hand vinegar and take about 1 tablespoon sushi rice in your right hand and mould it into an oval ball in the palm of your hand. Place the rice oval in the middle of a nori strip but perfectly aligned with the nori on one side. The nori strip should be rough side up.

  1. Wrap one half of the nori strip over the rice ball.

  1. Wrap the other half of the nori strip over the rice. To seal the ends, place a few grains of rice at the corner of the nori and press closed.

  1. Stand the gunkan upright on a surface with the empty part of the roll facing up.

  1. Fill the gunkan with your choice of topping.
